1. In saucepan over medium heat, cook dried apricots in water until tender.

2. In bowl, mix sugar, cornstarch, tapioca, and brandy until smooth. Stir in the cooked, dried apricots and canned apricots with heavy syrup.

3. Spoon into unbaked pie shell, cover with top crust, and sprinkle with sugar.

4. In 400˚ oven, bake for 10 minutes. Reduce heat to 350˚, and bake for 20 more minutes or until crust is nicely browned.

Tip: Refrigerated (not frozen) Pillsbury crusts are the choice in my kitchen.
